Dark Chocolate Cherry Overnight Oats – Breakfast
This is one of many delicious recipes from a cookbook which I got as a present a couple of years ago, and which I still exploring and learning from.
‘My New Roots’ from Sarah Britton, I hope you enjoy it as much as I do.
Ingredients:
2 / 3 of a cup rolled oats or any other rolled whole grain
1 cup / 250 ml nut milk of your choice, plus more for serving, or 1 / 225 ml cup of water or 1 cup / 245 of yogurt
1/2 teaspoon of lemon juice (omit if using yogurt to soak the grains)
2 tablespoons of chia seeds
1 1/2 tablespoon raw cacao powder
2 teaspoons cacao nibs
1 tablespoon pure maple syrop
sliced fresh cherries (berries are lovely too!)
Directions:
1. Fold the oats, milk, lemon juice, chia seeds together in a jar or bowl, cover, and refrigerate over night.
2. In the morning, remove the muesli from the fridge and fold in cacao powder, nibs and maple syrup. Top with the cherries. Add more yogurt or milk if desired. You can also let the muesli stand at the room temperature for 10 minutes to warm up slightly. For a pretty presentation layer the oat and chia mixture with the sliced cherries in a glass jar or bowl.
